Root Vegetable Bake

I've been focusing on shifting to a plant based diet and it's actually been going pretty well. Instead of centering my meals around a carb or protein, I center them around plants, and supplement with carbs and protein, if needed. This recipe focuses on root vegetables. 

Root Vegetable Bake

  • Beets
  • Carrots 
  • Sweet Potatoes 
  • Turnips
  • Lemons
  • Olive Oil 
  • Rosemary
  • Thyme
  • Pepper
  • Salt

Preheat your oven to 350 degrees. Wash and chop your vegetables into small bite size pieces. When you're finished chopping place them in a bowl (or pan) and drizzle olive oil and season. Squeeze lemon juice on top and mix the vegetables until they're evenly seasoned and mixed. Place in baking dish and put them in the oven. Bake for 45-55 minutes or until the vegetables are soft.
