Vegan Summer Pasta Salad

  • arugula 
  • pasta 
  • cherry tomatoes 
  • tofurky Italian sausages
  • olives 
  • salt 
  • pepper 
  • rosemary
  • basil 
  • nutritional yeast 
  • olive oil 

Boil a medium pot of water and add in the pasta. Let the pasta boil until the tips turn white. Remove from heat and strain out the water. Put the pasta in a glass bowl and add olive oil, salt, pepper, rosemary, basil and any other seasonings you would like. Mix the pasta until thoroughly coated and place in the fridge to chill. Chop the tomatoes and olives in half and set aside. Cook the tofurky sausage until slightly brown and slice. Place aside. Once the pasta has cooled, mix in the nutritional yeast, sausage, olives and tomatoes. Serve on a bed of arugula.
