Chickpea Protein Bowl

About two months ago I decided to go vegetarian and it has actually been easier than I thought. Going vegetarian has not only caused me to eat more vegetables, but also to seek out protein-packed foods. I think for a lot of people who are vegetarian, the biggest challenge can be replacing their daily protein intake.  I recently found out that green peas have a surprising amount of protein in them ( 7.9 grams per cup), which has led me to start adding them to most of my meals. Chickpeas are also a protein super star, with 39 grams  of protein per per cup! Add them together and you have a protein packed meal, sans meat. 


Chickpea Protein Bowl


  • Chickpeas
  • Frozen or fresh peas 
  • Chopped mushrooms 
  • Chopped cucumber 
  • Shredded carrot 
  • Couscous
  • Morroccan seasoning
  • Tumeric
  • Yellow curry powder 
  • Cinnamon
  • Salt 
  • Pepper 
  • Garam Masala seasoning

Add oil, peas, mushrooms and carrots to the pan and turn it to medium heat.  Cook until mushrooms are softened, adding seasoning as you go. Drain the can of chickpeas and add them to your vegetables. Continue to season and stir until the chickpeas are warm all the way through. 

To make the couscous, bring a pot of water to boil, add the couscous. Stir, cover and remove from heat. 

Add cucumber and moroccan seasoning for garnish.
